Chinese Mixed Fried Rice

Method
Original Recipe:
  1. Wash the rice, cook in plenty of boiling water, to which a tsp of salt is added.
  2. When it is just cooked, strain and spread in a wide plate and cool.
  3. (This can be done several hours ahead and rice can be stored covered in the frig).
  4. Scramble the eggs and keep aside.
  5. Chop the spring onions and keep the green and white part separately.
  6. Deseed and chop the capsicum.
  7. Finely dice the mushrooms.
  8. Heat oil in a kadai, (wok) add prawns, fry till they are cooked and remove.
  9. Add the chicken to the remaining oil in the kadai, fry for 1 minute and remove.
  10. To the remaining oil, add, one after another, capsicum, mushroom, white part of spring onion and spring onion greens, in that order, Stir-fry briefly after each addition.
  11. Add the rice, Soya sauce, salt, pepper and MSG.
  12. Add prawns and chicken meat.
  13. Add Scrambled the eggs.
  14. Mix well and keep covered on a low flame till heated through.
  15. Serve hot.

Improved Version:

  1. Cook the rice as explained earlier.
  2. Spread in a wide plate and cool.
  3. (This can be done several hours ahead and rice can be stored covered in the frig).
  4. Scramble the egg whites and keep aside.
  5. Chop the spring onions. Deseed and chop the capsicum.
  6. Finely dice the mushrooms.
  7. Heat oil in a kadai, add one after another, capsicum, mushroom and spring onion, in that order, Stir-fry briefly after each addition.
  8. Add the rice, soya sauce, salt, pepper and MSG if using.
  9. Add prawns and chicken meat. Add Scrambled the eggs.
  10. Sprinkle with chicken stock and keep covered on low heat till the rice is heated through.
  11. Serve immediately.

cleaned prawns - 1\2 cup, chopped
cooked chicken meat - 1\4 cup (cut into tiny pieces)
fine grained rice - 2 cups
eggs - 2
spring onions - 5 to 6
capsicum - 1
soya sauce - 2 tsp
mushrooms - few
msg - 1\4 tsp
oil - 4 tbsp
pepper to taste
salt to taste

Improved Version:
cleaned prawns, cooked and chopped - � cup
cooked chicken breast, cut into tiny pieces - � cup
chicken stock - 1 to 2 tbsp
egg whites - 3
black rice - 1 cup
spring onions - 8 to 10
capsicum - 2
salt - 1 tsp
soya sauce - 2 tsp
mushrooms - � cup
msg - 1\4 tsp (optional)
soya oil - 1 tbsp
pepper to taste
salt to taste
