Clean the mutton pieces thoroughly under running water.
Finely chop the onions & tomatoes. Keep them aside for later use.
Heat some oil in a pan. When the oil gets heated, add the whole
garam masala as
mentioned above (namely cloves, bay leaves, black pepper, cumin
seeds, cinnamon stick). Fry the spices for a few seconds.
Now, its time to add the chopped onions. Cook the onions until
golden brown in
colour. When they are ready, add tomotoes. Stir fry for a few
seconds. Cover the
pan with lid. After sometime, stir fry once again & see if the
tomatoes shrink in
Add the mutton pieces now, stir fry & cover once again with the
lid. See if the
mixture starts leaving moisture. Add turmeric powder. Cover once
Add salt, coriander powder, chilli powder, the
paste, curd. Stir fry. Cover the pan with the lid for a few
sample quantity of water to cook the mutton pieces.
When the mutton pieces are nicely cooked, allow some of the sauce
by simply evaporating the sauce on a medium flame.
Lastly, garnish the dish with freshly chopped coriander leaves.
